These types of services usually have a protected escrow process where you deposit the money for the project up front, and it is either released in partial payments as the project develops, or it is held until you are satisfied with the results. This is designed to protect both, you and the contractor. This way the money for the project is already in the hands of the third party, so the contractor can be paid, but still gives you a chance to dispute any problems you may have.

Allowing the contractor limited artistic license!

Sometimes, unscrupulous contractors will agree with you on the project technically or conceptually but try to change the project as they go. They may offer to add in certain benefits as a part of the deal. Once they get you to agree to something additional, that you may not know what all is entailed, they can simply run up the price tag and you have no recourse because you agreed to something you did not know about.
