I just love all types of nuts but cashews and pistachios are my favourite. I love the whole art of opening the shells of the pistachios and getting out the lovely brown skinned but green nut and then crunching it, tasting the salty coating and lovely flavour inside. I think that the fact that they are tricky to open makes it all more fun and just somehow adds to the appeal for me anyway. This is why I buy bulk pistachios as I get through a lot of them. I suppose for me they are like potato chips are for other people, I eat them as a quick snack, while I am watching TV and at the cinema. My other favourite is cashews, but these I like unsalted. I also buy bulk cashews and have them as snacks too. I like the sweetness of these which is why I do not like them salted. I think that masks the lovely sweet flavour. I also lovely the richness and the almost creamy butteries they turn to when chewed in the mouth. I love to cook with them too – I blend them up with dried apricots and then roll them in to balls and dip them in dark chocolate to make indulgent sweets, yum!
